Cheesy and Crispy Mamma Mia Sausage Bites


This recipe for sausage bites covered with Mornay parmesan sauce and a crumble of Fritos and pancetta will surprise you with its flavours and textures.

Ingredients


  • 2 packages of Mamma Mia sausages

Mornay parmesan sauce

  • 60 ml (¼ cup) flour
  • 60 ml (¼ cup) butter
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 500 ml (2 cups) milk 3.25%
  • 125 ml (½ cup) parmesan cheese
  • 5 ml (1 teaspoon) salt

Fritos and pancetta crumble

  • 1 small bag of Fritos
  • 150 g pancetta, sliced

Preparation


Mornay parmesan sauce

  1. Sauté the onions and garlic gently in butter without browning for 2 minutes.
  2. Remove from heat, add flour all at once and stir gently with a wooden spoon for 5 minutes.
  3. Add the milk and whisk to loosen the roux.
  4. Reduce heat to medium-low and bring to a boil, stirring constantly and scraping the bottom of the pan with a wooden spoon to prevent the sauce from sticking.
  5. Cook the sauce gently for 10 minutes, stirring occasionally, to cook the flour thoroughly.
  6. Remove from heat and add the cheese, stirring until it is well melted.
  7. Set the sauce aside

Fritos and pancetta crumble

  1. Cut the pancetta into small cubes and fry it in a pan, stirring constantly so that all the bacon is well cooked.
  2. Crush the Fritos with your hands into coarse pieces and add the cooked pancetta.
  3. Set the crumble aside.

Sausage and preparation

  1. Preheat the BBQ to medium-high.
  2. Brown the Mamma Mia sausages well and reduce heat slightly. Gently cook sausages until firm to the touch (internal temperature: 71°C) and let them stand for 3 minutes before cutting.
  3. Insert sausage pieces on small skewers.
  4. Dip each piece of sausage halfway into the Mornay sauce, then into the crumble to cover all the sauce. Make sure the sauce is not too hot or too cold to stick well to the sausage and crumble.
  5. Enjoy!
