Mamma mia! Sausage Burgers with Caramelized Onions


These sausage burgers with Mamma mia! sausages by Furca and candied onions are enhanced with a spicy and tasty mayo.

Ingredients


  • 2 packages of Mamma mia! sausages
  • 4 burger buns

Spicy mayo

  • 125 ml (½ cup) mayonnaise
  • 5 ml (1 teaspoon) Calabrian or other chilli paste
  • 7.5 ml (1 ½ teaspoon) maple syrup

Oignons confits

  • 4 Vidalia onions, finely chopped
  • 5 ml (1 teaspoon) butter
  • 5 ml (1 teaspoon) olive oil
  • 60 ml (¼ cup) sherry vinegar
  • 60 ml (¼ cup) maple syrup
  • 15 ml (1 tablespoon) Worcestershire sauce
  • 10 ml (2 teaspoons) tomato paste

Garniture

  • A few leaves of fresh arugula
  • Marinated commercial eggplants, to taste

Preparation


Spicy mayo

  1. Mix all the ingredients together
  2. Set aside

Caramelized onions

  1. Heat a skillet over medium heat, then add oil and butter.
  2. When the butter is melted and starts to froth, add the onions and season.
  3. Melt the onions gently, stirring constantly to prevent them from burning.
  4. When they are caramelized and melting well, add all the other ingredients, stirring the onions and scraping the bottom of the pan to collect the cooking juices.
  5. Reduce liquids to dryness.
  6. Set aside

Burgers

  1. Cook the sausages as indicated on the package and let them rest for a few minutes.
  2. Brown the cut sides of the burger breads in a frying pan with a little olive oil.
  3. Cut the sausages in half, then butterfly.
  4. Assemble the burger with all the ingredients.
  5. Enjoy!
