Lorraine European Sandwich


This original sandwich recipe combines the rich flavours of bacon and swiss cheese from the Lorraine de Furca sausage with endives and Dijon sauce.

Recipe made with Lorraine sausage.

Ingredients


  • 2 packages of Lorraine sausages
  • 4 small baguettes

Braised endives

  • 4 endives
  • 15 ml (1 tablespoon) butter
  • 250 ml (1 cup) chicken broth
  • 15 ml (1 tablespoon) honey
  • Salt, to taste

Dijon sauce

  • 125 ml (½ cup) mayonnaise
  • 30 ml (2 tablespoons) Dijon mustard
  • 5 ml (1 teaspoon) Worcestershire sauce
  • 10 ml (2 teaspoons) cider vinegar

Toppings

  • A few leaves of mixed lettuce

Preparation


Braised endives

  1. Preheat the oven to 165°C (325°F)
  2. Remove the unwanted leaves from the endives and cut them in half lengthwise.
  3. Preheat a skillet to medium-high heat.
  4. Melt the butter. When it is foaming, place the endives head to toe in the skillet.
  5. Reduce heat if necessary to keep butter frothy and add honey. Stir until the endives are well caramelized.
  6. Add the broth so that it does not cover more than a third of the height of the endives.
  7. Bring to a boil, cover and place in the oven for 15 minutes or until the endives are tender.
  8. Set aside.

Dijon sauce

  1. Mix all the ingredients together.
  2. Set aside

Sandwich

  1. Cook sausages as indicated on the package and let stand for a few minutes.
  2. Meanwhile, lightly heat the bread in the oven.
  3. Assemble the sandwich by placing the sauce at the bottom, the bread, the sausage on top, cover with the lettuce and endives.
  4. Enjoy!
