Try our version of tomatoes stuffed with Bruncha Breakfast Sausages, served with ricotta cheese and fresh herbs. An original idea that the whole family will love!

Recipe made with Bruncha Breakfast sausages

Ingredients


  • 1 pkg Bruncha sausages
  • 5 tomatoes
  • 125 m (½ cup) quality ricotta cheese
  • 250 ml (1 cup) fresh herbs
  • Fleur de sel, to taste
  • Freshly ground pepper, to taste
Vinaigrette
  • 60 ml (¼ cup) olive oil
  • 15 ml (1 tbsp) honey
  • 30 ml (2 tbsp) balsamic vinegar
  • 1.25 ml (¼ tsp) salt
  • 1.25 ml (¼ tsp) pepper

Preparation


  1. Preheat oven to 200 °C (400 °F).
  2. Remove the casing from the sausages.
  3. Remove the stalks from the tomatoes and cut them in half, then season generously with salt and pepper.
  4. Stuff the tomatoes with the sausage meat and bake in the oven for about 10 minutes.
  5. Once the tomatoes are cooked, set aside.
Vinaigrette
  1. Mix all ingredients with a whisk.
Assembling
  1. Garnish the tomatoes with ricotta. Drizzle with vinaigrette and season generously with fleur de sel and pepper.
  2. Garnish with fresh herbs, serve and enjoy!
